Pizzeria Locale

The quest for the perfect pizza is a journey, not a destination. There are many good pizzas out there and every once in awhile a really good pizza is discovered making the journey worthwhile.
I just found another one of those pizza places that's rises above the merely good.
Located in the Sycamore Plaza across the street from Kenwood Mall, Pizzeria Locale is a fast casual restaurant. While Pizzeria Locale is a chain, it is a small chain, one that operates like an independent restaurant. They serve craft beer from local breweries and it sounds like they are interested in doing collaborations with local chefs and eateries. I know Fusian loves doing that stuff, anyone up for sushi pizza?
So Pizzeria Locale is a very small chain, but they are more focused on quality than carpet bombing the country with locations on every corner. How so? They thought long and hard about the cooking process. They've taken baking a pizza from an art to a science. The pizza is placed into the oven on a rotating platform that takes 2 minutes and bakes the pizza evenly on all sides. The oven itself is handmade in Italy and the hand cranked meat slicers is also hand made by craftsmen.
Enough of all that though, the pizza is amazing. Could be some of the best I've had. I couldn't get over the flavor in the crust, the perfect amount of salt that pops the other flavors. And there was a richness in the background I couldn't put my finger on, was coming from the cheese or sauce? You'll just have to stop in and discover it for yourself.

  7. I'm a huge fan. the pizza is great, as are the salads and prosciutto. the budino is a great little desert, not too much, but satisfies the sweet tooth

  8. What no mention of their chipotle connection? They are owned by chipotle. It all started a few years ago in Denver (home of the first chipotle) today there are still only 6 pizzeria locale's in the USA. I love pizza and I love Chipotle. This place is a mutant hybrid which will eventually take over the earth. I for one welcome our new tomato based overlords.

  10. Yeah, pretty sure they're owned by Chipotle. I don't believe that "small chain" is a fair description for something that's soon to be off every freeway exit.
