using a knife, how hard can it be
Ms 5chw4r7z and I cook at home almost every night. And almost every meal we're cutting up fresh veggies. Years ago when we decided to eat better I read a pro tip to only shop the outer ring of the grocery store and not to buy anything down an aisle in a box or can. That is a lofty goal and we have managed to eliminate many of those items and the vast majority of food we buy are fresh ingredients. Which leads to a lot of chopping. Cutting something with a knife is about as intuitive as it gets right?
When Jordan Hamons invited me to attend a Knife Skills Class at Tablespoon Cooking Co. I was interested to see if I could streamline our kitchen prep game. Why would someone take a knife skills class? To be safer, gain confidence and become quicker and more efficient. Ms. Hamons was joined by chefs Becca Kinney and John DiPuccio. Ms. Kinney currently cooks at Pleasantry and Mr. DiPuccio cooks at Jean-Paul’s Paradiso, Sixteen Bricks and Allez Bakery.
I'm not going to rehash the whole class, let's just say I was surprised how wrong I was doing something that seems so simple.
I spent the majority of the class fighting to overcome old habits, I think that will still take awhile but holding a knife correctly was a game changer. I also appreciate how thorough Ms. Hamons, Ms Kinney and Mr DiPuccio were, they kind of reminded me of a drill sergeant (in a good explainy way, not in a bad shouty way). They would tell us what they were going to demonstrate, they would demonstrate it and then they would explain what they just demonstrated. After each lesson we would retreat to our workstations to practice and the three chefs would roam the tables injecting advice on improving techniques or giving hands on explanations until everyone got it.
Cutting peppers and onions efficiently were the most helpful for me. I could never get a grip on a good way to cut up a pepper without a lot of cutting. A proper cooks method slimmed the whole process down by at least half.
Three hours of instruction went fast, plus you take home everything you cut. Make sure to plan some soups and stews for the next few days after you take this class.
